Monita Tequila Margarita Cake Recipe


  • 2 1/2 cups all-purpose flour

  • 2 1/2 tsp baking powder

  • 1 tsp kosher salt

  • 12 Tbsp unsalted butter, room temperature, 1½ sticks

  • 1 1/2 cups granulated sugar

  • 2 large eggs, room temperature

  • 2 Tbsp lime juice

  • 2 Tbsp Monita Tequila

  • 1 tsp vanilla extract

  • 1 cup milk (non-dairy can be substituted)

Cake Syrup:

  • 1/4 cup lemon juice

  • 1/4 cup water

  • 1/2 cup granulated sugar


  • 8 oz package cream cheese, room temperature

  • 1/2 cup unsalted butter, room temperature

  • 1 Tbsp lime juice

  • 1 Tbsp lemon juice

  • 2 Tbsp Monita Tequila

  • 5 - 5 1/2 cups powdered sugar

  • 1 sprinkling of kosher salt


  • Preheat the oven to 325° F and spray the cake pan with non-stick spray.

  • Sift the flour, baking powder, and salt together in a separate bowl and sit to the side.

  • In another bowl cream the butter and sugar until light and fluffy (up to 5 minutes). Add one egg at a time, mix well after adding each egg.

  • Add lime juice, tequila, and vanilla extract. Mix until everything is blended.

  • Add half of the dry ingredients and half of the milk to the batter, stirring until just combined. Repeat with the remaining dry ingredients and milk.

  • Move the batter to the prepared cake pan and bake for 45-50 minutes or until golden brown and firm in the center. Let the cake cool for at least 20 minutes.

  • Prepare the cake syrup by combining lemon juice, water, and sugar in a microwave-safe bowl. Heat in the microwave for 20-30 seconds to dissolve the sugar.

  • Once the cake is cool, brush all of the cake syrup over the top of the cake.

  • In a large bowl, beat the cream cheese and butter until smooth. Stir in lime juice, lemon juice, and Monita Tequila (optional).

  • Gradually add cups of powdered sugar, mixing until light and fluffy.

  • Frost the cooled cake with the frosting. Garnish with a lime slice and it's ready to serve!
